Coconut Icing
Ingredients...
250g Butter
800g Icing sugar
50ml Milk
30-50ml Coconut milk
1 teaspoon vanilla essence
Coconut shavings
Enough for 24 Cupcakes
Instructions...
- Combine all the ingredients together in a large bowl, excluding the coconut milk. Mix them together with an electric wisk on a low speed. When thickened, add part of the coconut milk until happy with thickness.

Increase the speed slightly until the icing has lightened in colour and is fluffy.
- Decorate your cupcakes with the icing and top with a pinch of coconut shavings.
